Biopolymer and Swift introduce Gelcarin carrageenan
range for low temperature applications such as bacon. This technology
allows the processor to increase yields, improve texture and appearance.
The product is used as per conventional carrageenan.
Protanal
GP 1044 is a full functional Alginate blend developed for
meat applications. The technology is cold functioning as has wide
versatility for the meat processor.
The
Eliane range of innovative Waxy Potato Starches
are now available. This range of starches give great processing
tolerance in a wide range of applications. Based on potato they
are characterised by high viscosity and clean flavour profile and
offer a unique feature if they sheared. During shearing the starch
granules will disintegrate and give a smooth and shiny appearance
which is ideal fro Dairy Foods and Creamy dressings. This discreet
fragmented system is however is still stable.
